De ce este at\u00e2t de important s\u0103 te ui\u021bi pe pungile de cafea pe care le cumperi la magazin la \u201edata pr\u0103jirii\u201d ? Ce \u00eenseamn\u0103 &#8211; \u0219tiin\u021bific vorbind &#8211; \u201e<strong>prospe\u021bime<\/strong>\u201d \u00een contextul cafelei?<\/p>\n\n\n\n<p>Pentru a r\u0103spunde la aceste \u00eentreb\u0103ri, trebuie s\u0103 ne uit\u0103m la ce se \u00eent\u00e2mpl\u0103 cu boabele de cafea ca urmare a pr\u0103jirii acestora la temperaturi ridicate. Unii dintre cei mai importan\u021bi compu\u0219i, cum ar fi aldehidele &#8211; care au miros dulceag &#8211; \u0219i pirazinele, se evapor\u0103 foarte repede \u00een contact cu aerul &#8211; chiar \u00eenainte de ambalare, chiar \u0219i \u00een condi\u021bii cu con\u021binut sc\u0103zut de oxigen sau \u00een pungi vidate.
